Cod Tartar

400 gr Lugrade fresh cod

200 ml olive oil

100 ml vinegar

20 g mustard

10 g parsley

4 eggs

50 g capers


Cut the cod in small cubes and season with salt. Add the mustard, the chopped capers and the chopped parsley. Then, add the vinegar and drizzle with olive oil. Gently mix everything very well. Form the mixture into a rim.

At serving time remove the rim and place a raw egg yolk on top of the tartar.
