1 kg of spinach
2 Lugrade Cod faces
0.100 Kg Garlic
100 ml vinegar
200 ml olive oil
Bring a pan with water to a boil with a little salt.
When it starts to boil add the codfish faces and let them cook.
Once cooked take off the faces and set them aside. As a side dish cook the mash spinach. Boil the spinach in the same water where you cooked the cod faces and then put them in a bowl with icy water.
Saute the garlic in olive oil and let it cool.
Cold mash the spinach with the olive oil and the garlic.
At serving time heat the mixture, season with salt and pepper and sprinkle with the vinegar.
